Manolo's tortilla, declared heritage of the peña.
Nobody ever asked him. He never announced it. Every Sunday for twenty-two years, there it is, in the same dish, under the same cloth.
The peña has moved premises three times. It has changed president, treasurer and, for one unhappy season, even its team. It has never changed tortilla. Manolo arrives first, sets the dish at the end of the table, lifts the cloth and sits down without a word.
Those who have tried to copy it know: it isn't about the recipe. There's the potato, the onion, long debated, and something else Manolo won't say. The suspicion is that it's simply the fact of turning up.
The peña has therefore decided, unanimously and without a vote, to declare Manolo's tortilla heritage of the Monday. No plaque will be put up. He wouldn't have liked it. But the first dish on the table will stay his, and so will his seat at the end.
Manolo has never tried to be noticed. That is why everybody notices him. This Sunday, somebody had laid his place before he arrived.
